The following is a simple and simply delicious recipe - perfect for this season while we still have an abundance of strawberries available. Use it on your favorite yogurt, ice cream, fruit salad....the possibilities go on, on and on. I first created this recipe when playing with raw ice creams and ice cream sunday’s. When I tasted this strawberry sauce the carefree fun feelings of childhood were instantly re-awakened throughout every cell of my being! It’s so easy and so good. I hope you try it out for yourselves and love the outcome as much as I have!
Hot weather, ripe tomatoes, mulberries, and our corn is growing! Chickens and cows are happy for the sunshine and so are we and our plants. We had our first "new" potatoes made into potato salad and fresh strawberry shortcake, all made from farm ingredients for Matthew's birthday on Sunday. Mabel, our granddaughter turns two on Thursday and she is excited about her birthday coming! One of our cows, Cacao is due any day now, however we are hoping she waits until we return from Mexico so we will be here to care of the new baby calf.

With the onset of Spring (La Pimavera) I was inspired to take on committing to a 100% raw vegan diet for one full year to cleanse, regenerate and see what amazing possibilities this food program could create in my life. At the same time I am also looking at a way to simplify my diet and am following a low-fat raw vegan diet that is very similar to Dr. Douglas Graham’ “80-10-10” used extensively by vegan athletes with amazing results. The 80-10-10 program is 80% carbohydrates (which translates to fruit in a raw vegan context), 10% protein (leafy green vegetables) and 10% fats (avocados, olives, nuts and seeds). So far I am very inspired by how I feel and the new ideas this new paradigm creates for me as a chef!
Salad: Wash and chop an interesting mix of salad greens. In this recipe I used escarole, curly endive and romaine lettuce but feel free to add in your favorites: spinach, radicchio, frisee, dandelion greens…the more exotic the better!

I love raw pie! Strawberry pie is one of the first treats I made when I first became interested in Raw foods. When I first encountered a recipe on the internet I thought it was too good to be true. Now I make it all the time and have perfected this simple recipe. Its best served with raw vegan vanilla bean ice cream, especially to children or adults with a desire for a special treat that takes little time to prepare. I hope you relish this recipe as much as I do!
Hi, So happy to be home from Hawaii. The workshop on Community building was amazing and we are grateful to be here and getting ready for Spring! We have cabbage in the garden and the tomatoes in the greenhouse are looking strong and healthy! We had a surprise “hail/snow storm” last week! It was warm and beautiful and then all of a sudden it got cold and windy and then windy with thunder and lightning and SNOW! I am including a picture, as it is hard to imagine.
I am loving not wearing a jacket, first time this morning, when I get up early to feed the chickens. I notice I am starting to feel like tomatoes, and zucchini, and strawberries sound good. I love how my diet choices change with the seasons. I was sharing with Matthew yesterday how wonderful it is to walk about the farm when it is quiet and listen to the sounds of nature and feel my heart connecting with the earth. I wish that feeling for everyone.
I admitingly have quite the sweet tooth. Chocolate calls my name when it's within shouting distance. Coming back from some indulgent holiday potlucks... I've been working to reinspire myself with eating better into the new year. This is a recipe that I make for myself every morning. It hits my sweet tooth, is easy and quick to make and clean up after, and contributes to me loving my morning and feeling good for the rest of the day. It can also be altered for different commitments and lifestyles for less or more sugar, all raw or high raw and is always organic and delicious.
