Serves 2
Live Veggie Noodles
11 ounces celery root
10 ounces of the following: parsnip, zucchini, or daikon
Get out your spiralizer and place in the desired blade (a small blade for spaghetti, or wider for fettucini). Place your peeled vegetable root in, and spiral away.
Toss the noodles with a pinch of salt and a little olive oil to soften them.
Just in the time for the heat to roll in, I bring you this luscious recipe for lemon meringue pie. This crust is by far one of my top favorite things from Cafe Gratitude! This pie isn't on the menu right now, but we might see it return in a new reincarnation of the concept. Meanwhile, as you sit on your balcony or porch, or lounge at the park, you can relish this magical pie through this recipe!

Ever since I learned cooking from my mom Lalit-Amma when I was 9 or 10, I have secretly wished to break the rules and guidelines to come up with my own "specials." They included mixing and matching fruits and vegetables, various grains instead of one, and of course, raw foods.
When I came to work for Cafe Gratitude in December of 2006 as the payroll and accounts payable manager, my adventurous self ( inspired by my mom and the great American spirit of freedom and independence) was energized to recreate some of my mother's recipes with a touch of "BAM!"
